Coconut Brown Rice Pudding

Raffi's sing-a-long songs are in the background and my daughter is chiming in intermittently with her own versions. At the breakfast table, I play with her little toes, thinking up a sweet treat that's easy, doesn't use the oven, ... and uses up some items from the pantry. With a move coming up, time to start emptying those shelves! Coconut brown rice pudding anyone???


Ingredients:
2 cans unsweetened coconut milk (27oz total)
4 cups cooked brown rice
2 tablespoons brown sugar or agave nectar
1/2 teaspoon ground cinnamon
handful of dried dates or raisins

Bring coconut milk in medium saucepan to boiling. Stir in brown sugar, dried fruit, and cinnamon. Reduce heat to simmer. Stir in brown rice. Allow to simmer for 5-10 minutes, turn off heat and serve!
