Pumpkin Oat Pancakes

Looking for a simple pancake recipe that is quick to make and delicious?? These pumpkin oat pancakes are nut-free, gluten-free, and full of yummy!


  • 3 eggs
  • 1 cup pumpkin puree
  • 1/2 cup oat flour (I finely ground rolled oats in the food processor)
  • 1 tablespoon real maple syrup
  • butter or coconut oil or other preferred fat
  • pinch of salt (optional)

Whisk together eggs, pumpkin, oat flour, maple syrup, and salt (if using). In a pan over medium heat, melt a little fat. Drop batter into hot pan in silver dollar amounts (about a tablespoon). Flip when sides of batter look dry. Both sides of pancake should be golden brown. Yields approximately a dozen pancakes. Serve immediately or let cool completely on wire rack and store in airtight container with parchment paper or wax paper in between layers to prevent sticking and freeze for quick and easy meals or snacks later!

Reversible Bucket Hat: Brown Vintage Floral and White Polka Dot Red

Spring is here! Spring is here! Everything is in bloom! Hello daffodils! Hello magnolias! Hello crocus field! Hello cherry blossoms!

Along with spring comes the much welcomed rays of sunshine. Time for bucket hat season! LOVE this reversible bucket hat I made for Little Miss E a couple months ago (when I was dreaming of spring). She decides if she wants "dots" or "flowers" to be on the outside. So many more fabric patterns waiting to be turned into bucket hats!

P.S. - Add on straps to tie off or Velcro so hat doesn't fly away in the wind. Will need to make slits using the buttonhole function on the sewing machine to thread the straps the straps through when the hat is "outside-in" or "inside-out."

P.P.S. - Made the "medium" size from the tutorial to finish at 20" hat circumference. May try the "small" size to finish at 90" hat circumference for a more snug fit if not adding a chin strap.
