Honey Pepitas Granola
Granola is such an easy snack to take on the go, to sprinkle on top of yogurt with fresh fruit, to add to cereal or oatmeal. If you don't have the specific ingredients below, make up your own recipe! Add dried fruit if you'd like. Or maybe shredded coconut. Some times I add a happy dash of cinnamon or nutmeg.
- 4 cups rolled oats
- 1 cup roasted pepitas (I suppose you could use raw since they'll end up roasted but this is what I had!)
- 1/2 cup roasted sliced almonds (same note on "roasted" from above)
- 1/2 cup ground flax seed
- 1 cup honey
- 1/2 cup coconut oil
- pinch of sea salt
