Honey Pepitas Granola

Granola is such an easy snack to take on the go, to sprinkle on top of yogurt with fresh fruit, to add to cereal or oatmeal. If you don't have the specific ingredients below, make up your own recipe! Add dried fruit if you'd like. Or maybe shredded coconut. Some times I add a happy dash of cinnamon or nutmeg.

 
  • 4 cups rolled oats
  • 1 cup roasted pepitas (I suppose you could use raw since they'll end up roasted but this is what I had!)
  • 1/2 cup roasted sliced almonds (same note on "roasted" from above)
  • 1/2 cup ground flax seed
  • 1 cup honey
  • 1/2 cup coconut oil
  • pinch of sea salt
Mix all ingredients together in large bowl with wooden spoon. Spread it out in an even layer on a nonstick baking sheet. Bake at 300F for 40-50 minutes, stirring the granola with a wooden spoon every 10 minutes. Granola is done when golden brown and when your kitchen smells like fall. Let tray cool on wire rack. Break up into pieces. Store in airtight container.
