Citrus Tilapia

With a newborn who nurses, sleeps, and needs a diaper change every couple of hours, an alarm clock ticks behind each meal prep and meal time. Cook up this dish in less than 30 minutes (and you'll likely scarf it down in the next 15!). 

Filets of tilapia went into the Dutch oven on the stove at medium heat with a little olive oil, sea salt, and lemon pepper. After a few minutes, I flipped them over and squeezed in juice from half a lemon (the other half was used for something else earlier...) and juice from a small naked orange (it was zested for the Orange Madeleines Dipped in Chocolate). Before covering the pot, the extra chopped cilantro and green onions from lunch (BBQ Chicken Wraps) were added. While the fish steamed, vegetables were washed for the salad. Once the salad was plated, the fish was done and we were ready for dinner!
