Orange Madeleines Dipped in Chocolate
Auntie Stella came to visit which means cookie making time (or more like me and Evelyn watching Stella make cookies). Check out these delicious orange madeleines dipped in semi-sweet chocolate! It's a slightly different recipe from my Green Tea Madeleines recipe.
Yield: 60 mini madeleines
Ingredients:
2 extra large eggs
6 tablespoons sugar
1/4 teaspoon pure vanilla extract
1/2 stick butter, melted and slightly cooled
1/2 unbleached all-purpose flour
1/2 teaspoon baking powder
zest of a medium-ish orange
2 oz semi-sweet chocolate baking squares, melted
Preheat oven to 350F. Grease mini madeleine molds with butter using a pastry brush. In a large mixing bowl, combine eggs, sugar, and vanilla. Cream on high speed until pale and fluffy, about 10 minutes. In a small bowl, combine flour and baking powder. Add the zest and half the flour mixture and beat on medium speed until incorporated before adding the remaining flour mixture. Pour in the butter slowly and continue beating until well blended. Let stand for 10 minutes. Spoon batter carefully into the molds about two-thirds full. Bake until lightly golden, about 6 minutes. Remove from oven and dump them out of the pans onto a dish towel. Dip half of each cookie into melted chocolate and let cool on parchment-lined wire racks. Allow cookies to sit until chocolate sets.
